I also asked him how he sees the price\/quality ratio, a subject many avoid because it is sensitive. But Stefan kept it simple. \"For me, perfect for me is to have a balance between quality-price\", then he added without hesitation: \"I will always shoot for products that are a bit more premium, more qualitative, rather than getting something that maybe is more affordable, but over time loses money and loses the essence that I'm trying to create here.\" He's not trying to impress; he's just explaining why, when you eat something at Jaxx, you feel that the ingredients actually taste. After talking to Stefan, the way I perceived the dishes there changed. You understand his work differently when you know that for him ingredients are not just a necessity, but a responsibility. Behind a good dish is not only a talented chef, but also a chain of decisions, relationships and choices that you don't see as a customer. And he doesn't try to wrap them up in pompous testimonials, he tells it like it is and puts it into practice every day.

For us, Jaxx has become the place where we convinced ourselves that a good dish starts with people who respect their work and their ingredients. And I think you can feel that, especially on a date: when everything is simple, calm and well done, conversations flow differently.<\/p>\n\n\n\n
