Jaxx is located on 25 Emil Isac Street, a few minutes from the center of Cluj, in an easy-to-find area suitable for a quick lunch or longer evenings. The concept of the place is a mix of international cuisine and American influences, with a large, airy space that retains a very friendly rock aesthetic.

What sets it apart, beyond the soft & chill atmosphere, are the people. That's why we wanted to find out more inside. In our chat with Stefan V., one of the chefs, the main topic was how to build the quality of a restaurant, not just through recipes, but through the relationship with suppliers.

Stefan is the kind of man who talks about food with a kind of quiet respect, without becoming pretentious or turning everything into a complicated philosophy. He told us that for him, quality starts with the people in the restaurant's invisible chain: the suppliers. "The relationship with suppliers I think is a very important part of any business. There has to be a symbiosis," he explained with a naturalness that shows he is not repeating a learned idea, but one he lives every day. We liked very much the way he formulated the idea of trust: "Maybe not necessarily a family relationship, but a friendly relationship, because there is a very high level of trust when he brings you raw material." His calm but confident tone said it all. In a world where many are just trying to tick off the lowest cost, he sees suppliers as partners who directly influence the taste on the plate.

I also asked him how he sees the price/quality ratio, a subject many avoid because it is sensitive. But Stefan kept it simple. "For me, perfect for me is to have a balance between quality-price", then he added without hesitation: "I will always shoot for products that are a bit more premium, more qualitative, rather than getting something that maybe is more affordable, but over time loses money and loses the essence that I'm trying to create here." He's not trying to impress; he's just explaining why, when you eat something at Jaxx, you feel that the ingredients actually taste. They don't cut corners there, and you can feel it before you know where it's coming from.

Culinary Experience 🍽️

The dining experience then was simple, no gimmicks, but very well executed. Jaxx isn't the kind of place where plating intimidates you or where you feel like you can't speak normally. Everything here remains relaxed: good portions, clean plates and dishes that say more through taste than form. The rock-style music in the background is carefully dosed to create a vibe, not a statement. It's a good place to chat, laugh, share plates and slow the pace without feeling noticed.

After talking to Stefan, the way I perceived the dishes there changed. You understand his work differently when you know that for him ingredients are not just a necessity, but a responsibility. Behind a good dish is not only a talented chef, but also a chain of decisions, relationships and choices that you don't see as a customer. And he doesn't try to wrap them up in pompous testimonials, he tells it like it is and puts it into practice every day.

For us, Jaxx has become the place where we convinced ourselves that a good dish starts with people who respect their work and their ingredients. And I think you can feel that, especially on a date: when everything is simple, calm and well done, conversations flow differently.
